    Zucchini pizza casserole:

    crust , or base:

    2 cups shredded zucchini, 1/2 tsp salt, 2 eggs slightly beaten 1/2 cup Parmesan cheese, 1cup grated cheddar cheese, 1 cup mozz cheese.

    place zucchini in a strainer and sprinkle with salt. Let drain 10 minutes and squeeze out excess moisture. In a bowl, combine zucchini,eggs, Parmesan, and 1 cup of cheddar and mozz cheese. Mix well and press into a greased 13 x 9 pan. Bake 400 for 20 minutes.

    In a skillet brown 1 pound gr beef and 1/2 cup chopped onion. brown. Drain and add a 15oz can of tomato sauce, 1/4 tsp oregano, 1/4 tsp basil. Spoon over baked zucchini. Top with another cup of mozz and cheddar cheese. Sprinkle with a chopped green pepper. Return to oven and bake an additional 20 minutes. Makes 4-6 servings.
