  • Low Carb Stuffed Pizza

    I originally got this recipe from but I made some changes. Original recipe is linked below, but below are my additions. I entered everything into so that is where the counts come from.

    12.0 oz(s), Ground Chicken Breast (the leaner the better, I used 95% lean chicken breast)1.0 tbsp(s), Parsley - Raw
    1.5 cup(s), Shredded Mozzarella
    1.0 qty, Jalapeņo Pepper-raw

    1.0 tbsp(s), Spices - Basil, fresh
    0.5 tsp(s), Spices - Onion powder
    0.5 tsp(s), Spices - Garlic powder
    0.5 cup (63g), Spaghetti Sauce No Sugar Added Italian Style
    3.0 oz(s), Feta
    0.5 package, Pepperoni Slices
    8 pieces, Tomatoes - Sun-dried, sliced
    10.0 Olives, Kalamata, Greek, halved
    0.75 cup(s), Shredded Mozzarella

    Cook the chicken, the put it and 1.5cups of mozzarella and the jalapeno (optional) in a food processer. Grind it and it will become like a paste.
    Spread a little over half of the chicken paste in a parchment paper lined spring form pan (9 or 10inch).
    Top the "bottom crust" with parsley, basil, onion powder, garlic powder, sauce, tomatoes, feta, olives, and half the pepperoni.
    Spread out the remaining "crust" and place on top. Top with sauce, remaining mozzarella, and remaining pepperoni.
    Put in 350 degree oven until cooked and barely starting to brown (12-18 min, depending on pan size), then place under broiler to brown (watch it, it will only take a couple minutes).

    Gluten free, low carb stuffed pizza that's as good as restaurant pizza? I made it. I ate it! This recipe is super easy and fun and uses the spring form pan to bring the lovely. Look at these layers...
