    My wife made baked chicken last night, instead of using bread crumbs she coated the chicken with pork rinds before baking. Tasted excellent and the pork rinds have no carbs.

    Thanks for the tasty tip, Dan ! I've done something similar with fish although in that case I sometimes use almond meal in with the pork rinds. I don't think that would be a good idea for the chicken, though, since the cook times are greatly different between the two.
